Recommend some good (free) VPNs?
There are no good free VPNs. The companies want to make money, so you’re going to be paying in other ways.
Mullvad has a great reputation for $5 per month. They don’t keep logs.
I’ve tried ProtonVPN for US based servers and they’ve worked flawlessly for circumventing geolocation restrictions and streaming 4K.

Requires some setup, but if you have a home router that offers Open VPN, like Asus, you can set that up, and use the free Open VPN app on the iPad and then when you are out and about you can connect to that, and it tunnels over the Internet to your home router and then out to the Internet, all encrypted. Benefits are security and the ability to “appear” to be at your home, so things like YouTube TV work well (you do have to disable location on the iPad)
A downside would be if you want true privacy, this will be the same as if you are at home, so you will be identifiable if you do something bad.
I have been very happy with this setup on my Asus router and use it on my iPad M1 Pro 11 and on my Samsung S21 as well.
Exactly, they need to keep the lights on somehow and when they are giving you a “free” service, your data they are collecting is the payment.
