A proxy is a legitimate man in the middle device. You send your request to the proxy and the proxy fetches it for you. The proxy can monitor the communications. Especially if they require them to install their certificate

A proxy doesn’t prevent man-in-the-middle attacks. There are two kinds of these attacks that affect Internet browsing:
First kind is server impersonation. If you access a site with an insecure connection (http), man-in-the-middle attacks are still possible on both sides of the proxy. A secure connection (https) prevents these attacks with or without a proxy.
Second kind is a phishing attack. If an attacker fooled you into accessing a different server (for which the attacker has a legitimate certificate) and is proxying content to/from the server you think you’re accessing, that attack works even if you’re using https and your own proxy won’t be preventing it either. You can avoid these phishing attacks by not clicking on inbound links in your email, knowing what the correct domain is for your destination, and actually checking the URL to know it’s correct.
