No they can not see what you are doing just that you are connected to a vpn if they know how to monitor network traffic and if it is just a mom pop shop they probably don’t even know how to do that. If you are in some sort of company you might be in violation of their network policies. If it is a small business they probably don’t have a network policy and using a vpn will ensure they don’t see what porn you are watching at work. A vpn encrypts traffic from your device to the vpn and they send you everything back encrypted so it is completely private. They may be able to distinguish that you are watching videos based on bandwidth usage but they will not know what videos.
Generally no – all they can see is that you are using some type of encrypted traffic. I say generally because they can see the end VPN node you’re going to, and they may then realize it’s a VPN. Still, this is unwise. At least in the US, that is their network, under their rules. You should ask – especially if you like your job. Otherwise, get an inexpensive cellular hotspot and be done with it, or see if your employer has a “red” network as we call it, that does nothing but Internet access - and thus, they don’t care.
They cannot see specifically what you are doing. However a large company like Google or Amazon can tell you are using a VPN and that mY raise flags.

Once you connect to a VPN, they can’t see your traffic, all there going to see encrypted data being transmitted back and fourth, and the amount of data used.
This is sort of my reason for asking about VPN’s in the workplace- I have a 40gb limit on my mobile hotspot and it doesn’t get me through the month. The ‘add-on’ plans are insane- like $15 for 10gb.
Again, your employer might have an “unfiltered” net VLAN that only goes the Internet – we often have that for contractors.
